Lemon Matcha Cake

Ingredients:
Cake
- 2 cups oat flour
- 1 cup almond or hazelnut flour
- 1 cup brown sugar
- 3 eggs
- 1 big lemon (zest & juice)
- 1/2 cup oat milk
- 3 T Ghee
- 2 tsp Shakti Matcha Powder
- 1 1/2 tsp baking powder
- a pinch of salt
Glaze
- 2 T Honey
- Zest & juice of one lemon
- 1 tsp Shakti Matcha Powder
- 2/3 cup of plant based or natural greek yoghurt
Instructions:

Prepare the Batter:
- In a mixing bowl, combine the eggs and brown sugar. Use a whisk or an electric mixer to ensure a smooth blend.
- Add the fresh lemon juice and zest for that zingy citrus flavour.
- Introduce the oat milk, Ghee (clarified butter), and Shakti Matcha powder. Mix vigorously to incorporate all the ingredients.

Incorporate Dry Ingredients:
- Gradually add the flours (oat or all-purpose if not GF and almond or hazelnut flour for a nutty dimension) into the wet mixture.
- Sprinkle in the baking powder, which will give your cake a delightful rise.

- Gently fold the dry ingredients into the wet mixture. This is where you bring the batter together while retaining its lightness.

Preheat the Oven:
- Preheat your oven to 180 degrees Celsius. Allow it to reach the desired temperature before placing your cake inside.

- Transfer the batter into a prepared cake pan, ensuring it's evenly distributed.
- Slide the pan into the preheated oven and set your timer for around 40 minutes.
