Roasted Peaches with Vanilla-Cashew Sauce and Crunchy Nuts & Seeds


For the Vanilla-Cashew Sauce:

  • 100g cashews, soaked overnight or in hot water for 4 hours
  • A pinch of bourbon vanilla
  • Zest and juice of 1/4 lemon
  • 1 cup rice milk
  • 1 tablespoon honey

For the Crunchy Topping:

  • 1/4 cup almonds, chopped
  • 1/4 cup walnuts, chopped
  • 1/4 cup sunflower seeds
  • 1/4 cup dates, chopped
  • 1 tablespoon sesame seeds
  • 1 tablespoon peanut butter or other nut butter
  • 2 tablespoons maple syrup
  • 1 teaspoon Tola Spice Mix

For Roasting:

  • Peaches, sliced thick
  • Ghee, for roasting

For Seasoning:

  • Madhure Spice Mix


1. Vanilla-Cashew Sauce:

  • Drain soaked cashews and blend them to a creamy consistency with bourbon vanilla, lemon zest, lemon juice, rice milk, and honey. Set aside.

2. Crunchy Topping:

  • In a bowl, combine chopped almonds, walnuts, sunflower seeds, dates, and sesame seeds.
  • Add peanut butter, maple syrup, and Tola Spice Mix. Mix until everything is well coated.
  • Spread the mixture on a baking sheet and bake in the oven at 160 degrees Celsius until dry. Set aside to cool.

3. Roasting the Peaches:

  • Slice the peaches thickly.
  • Heat ghee in a pan and roast the peach slices until golden and tender. Remove from heat.

4. Assembling:

  • On a plate, arrange the roasted peach slices.
  • Drizzle generously with the prepared Vanilla-Cashew Sauce.
  • Sprinkle the crunchy nut and seed mix over the top.
  • Season with Madhure Spice Mix for a final touch of exquisite flavor.
